Value addition/enrichment and characterisation of some Nigerian traditional snacks namely Kokoro (from whole maize); Kulukuli (groundnut-based) and donkwa (from groundnut and maize) with well known nutraceuticals such as pepper (Capsicum annum); ginger (Zingiber offinale); sweet basil (Ocimum gratisimum); orange peel (Citrus sinensis);cocoa powder )Theobroma cacao); soya beans (Glycine max) and roselle (Hibiscus sabdariffa).
