Entrepreneurship, food production and safety have a function of males in most developing countries. However, women remain the managers of most of theses enterprises. Leadership capacities and innovations may be overlooked with women as entrepreneurs. In an attempt to improve on the quality of safety and food and health care; the production and preservation of perishable food items has been the focus of research.
