Fermentation; Milk quality control. Traditional fermentation was used for the manufacture of curd milk. Raw milk was contaminated by a high level of microbial flora. Isolation of useful lactic acid bacteria species was also done from curd milk. Technology was without good hygienic conditions. Starter utilization and quality control were necessary.
